  1. In a food processor, combine the soaked sunflower seeds, pumpkin seeds, almonds, lemon juice, tamari or coconut aminos, nutritional yeast, garlic powder, onion powder, salt, and pepper. Blend until smooth, adding water as needed to achieve a creamy consistency. This will be your wrap filling.
  2. Lay the collard green leaves flat on a clean surface. Trim the thick stems and gently press down on the center rib to flatten them slightly.
  3. Spread a layer of the wrap filling onto each collard green leaf, leaving a border around the edges.
  4. Arrange the julienned carrot, cucumber, bell pepper slices, avocado slices, red onion slices, alfalfa sprouts, and cilantro leaves on top of the wrap filling.
  5. Starting from one end, tightly roll up the collard green leaf, tucking in the sides as you go, to form a wrap.
  6. Place the wraps on a dehydrator tray lined with a non-stick sheet or parchment paper.
  7. Dehydrate at 115°F (46°C) for 2-3 hours, or until the wraps are slightly softened and the flavors are melded together.
  8. Once dehydrated, carefully slice the wraps into smaller pieces using a sharp knife.
  9. Serve the raw vegan veggie wraps with your favorite dipping sauce or enjoy them as is.
